If you love tomatoes and you love pesto, this one is a sure hit (it is in our family!).

Grilled Tomatoes with Pesto

4 – Roma Tomatoes, halved
1/4 cup – pesto, divided
2 – green onions, sliced thin
1/2 cup – shredded mozzarella or provolone cheese
2 tbsp – chopped fresh parsley

Using a spoon, scoup out top 1/4 inch from each tomato half. Spread a small amount of pesto over each tomato half. Sprinkle green onions on each half. Combine remaining pesto with cheese and top each tomato with mixture.

Grill tomatoes directly on grid or in grill topper over medium heat until tomatoes are heated through and cheese is melted (10-15 minutes). Sprinkle with parsley.
