Two delicious snacking foods that are ideal for summer fare….in fact I can’t get through the summer without making them at least a couples times!   I do play a little each time I make them (adding more or less of ingredients) so feel free to experiment!

Guacamole, chopped
salt to taste
splash of olive oil

2 – ripe avocados or more
1 – tomato, finally chopped
1/2 – onion (white), finally chopped
2 tbsp – lemon juice
sprinkle of salt

Peel avocados and mash well. Add tomato, onion, salt and lemon juice. Mix well. You can garnish with a sprinkle of paprika for colour. Serve immediately with a big bowl of nachos!

Pico De Gallo (Salsa)

2 – large tomatoes or more, chopped
1 – onion (white), chopped
1 – jalapeno pepper, chopped seeds and all (omit if you don’t like heat)
1 – lime, juiced
handful of fresh cilantro

Mix tomato, onion, cilantro and chile in a serving bowl. Pour juice over mixture and add salt to taste. Serve with mounds of nachos!
